Rolled Pancetta

Ingreadient

    • 2 lb (1 kg) bacon, skin-on
    • Garlic powder
    • Paprika powder
    • Salt and white pepper, to taste
    • Olive oil

Direction

    1. Remove the fibers from the pancetta and score the meat. Add spices to taste. For more flavor, you can use Dijon mustard and smear the inner part of the meat.
    2. Roll up the piece of pancetta and secure with kitchen twine or string.
    3. Place the pancetta on a piece of aluminum foil, making a small packet to contain the fat rendered during cooking, that will be used to glaze the porchetta.
    4. On the Instant Vortex control panel, press Air Fry, then set temperature to 375ºF (190ºC) and time to 55 Minutes. Press Start.
    5. Remove carefully and glaze the porchetta with the remaining rendered fat. Cut carefully and serve with French fries on a sandwich bun.
