Perfect Risotto

Ingreadient

    • 1/4 cup butter
    • 1 yellow onion
    • 2 cups Arborio rice
    • 1/2 cup dry white wine
    • 5 cups stock
    • 1 tsp salt
    • 1/2 cup parmesan
    • Black pepper to taste

Direction

    1. Peel and dice one medium yellow onion.
    2. Melt butter in the Instant Pot on the Sauté, More.
    3. Add the diced onion and cook for 3-5 minutes, until the onion is translucent and fragrant.
    4. Add Arborio rice and cook for 1-2 minutes.
    5. Add dry white wine, scraping the bottom of the pan to ensure nothing is sticking.
    6. Add any flavored stock (chicken, beef, or vegetable), along with salt, stir to combine.
    7. Pressure Cook on High for 5 minutes. When the time is up, allow for 10 minutes natural release, then carefully quick-release the rest of the pressure.
    8. Add grated parmesan, stir to combine, add any additional salt and pepper to taste.
    9. Serve warm as a main for lunch or dinner.
