Perfect Risotto

- 1/4 cup butter
- 1 yellow onion
- 2 cups Arborio rice
- 1/2 cup dry white wine
- 5 cups stock
- 1 tsp salt
- 1/2 cup parmesan
- Black pepper to taste
Direction
- Peel and dice one medium yellow onion.
- Melt butter in the Instant Pot on the Sauté, More.
- Add the diced onion and cook for 3-5 minutes, until the onion is translucent and fragrant.
- Add Arborio rice and cook for 1-2 minutes.
- Add dry white wine, scraping the bottom of the pan to ensure nothing is sticking.
- Add any flavored stock (chicken, beef, or vegetable), along with salt, stir to combine.
- Pressure Cook on High for 5 minutes. When the time is up, allow for 10 minutes natural release, then carefully quick-release the rest of the pressure.
- Add grated parmesan, stir to combine, add any additional salt and pepper to taste.
- Serve warm as a main for lunch or dinner.
