Coconut Curry Chickpea Soup


Tender chickpeas, tomato, and onion simmered with aromatic spices and coconut milk, offering a sweet, spicy, and slightly nutty flavor profile. Featuring Custom Culinary® True Foundations® Coconut Curry Sauce.

Ingreadient

    • 4 bags    True Foundations Coconut Curry Sauce
    • 3-28 oz cans    Chickpeas
    • 3-28 oz cans    Petite diced tomatoes
    • 2 - 14 oz cans    Coconut Milk
    • 2 tbsp    Chopped Ginger
    • 2 tbsp    Chopped Garlic
    • 1 ea     large Onion Diced
    • 1 tbsp     Garam Masala
    • 2 tbsp    Ground Turmeric
    • 2 tbsp    Tomato Paste
    • 1 bun    Chives chopped

Direction

    1. Dice and sauté one large onion
    2. Add ginger and garlic and sauté
    3. Add tomato paste a sauté a bit more
    4. Add turmeric and garam masala and stir a bit
    5. Add diced tomatoes and stir
    6. Add coconut milk and stir
    7. Add all bags of coconut curry sauce
    8. Bring to a boil and stir during the process
    9. Let simmer for 10 min
    10. Add chickpeas, turn off the heat and allow to cool
    11. Ladle soup into a bowl and garnish with chopped chives and naan croutons
