Chocolate Pudding


This chocolate pudding is a simple yet luxurious foodservice-friendly take on a classic comfort dessert. Great as is, or as an element of a composed dessert.

Ingreadient

    • 2 qts.    Water, cool
    • 1 qt.    Cream, heavy
    • 28 oz.     Cream Soup & Sauce Starter Mix
    • 2 c.    Chocolate, chips, dark
    • 2 c.     Eggs, whole, beaten lightly
    • 1/2 c.     Sugar, granulated
    • 1 T.    Vanilla, extract

Direction

    1. Mix water, cream, and the Cream Soup & Sauce Starter Mix in a large saucepan.
    2. Bring to a simmer over medium heat, stirring with a whisk until smooth.
    3. Once the mixture reaches 165-180º F, add chocolate, sugar, eggs, and vanilla.
    4. Return mixture to heat to bring back to 180º F.
    5. Serve hot or add to desired service vessels to chill and firm.
