Chocolate Pudding
This chocolate pudding is a simple yet luxurious foodservice-friendly take on a classic comfort dessert. Great as is, or as an element of a composed dessert.
Ingreadient
- 2 qts. Water, cool
- 1 qt. Cream, heavy
- 28 oz. Cream Soup & Sauce Starter Mix
- 2 c. Chocolate, chips, dark
- 2 c. Eggs, whole, beaten lightly
- 1/2 c. Sugar, granulated
- 1 T. Vanilla, extract
Direction
- Mix water, cream, and the Cream Soup & Sauce Starter Mix in a large saucepan.
- Bring to a simmer over medium heat, stirring with a whisk until smooth.
- Once the mixture reaches 165-180º F, add chocolate, sugar, eggs, and vanilla.
- Return mixture to heat to bring back to 180º F.
- Serve hot or add to desired service vessels to chill and firm.
