Caldo de Vegetales


A hearty vegetarian soup with scallions and carrots, simmered in Latin-style vegetable broth, and garnished with fresh cilantro.

Ingreadient

    • 8 oz    True Foundations® Latin-style Vegetable Broth
    • 4 oz    Assorted Roasted Vegetables (Sweet Corn, Zucchini, Squash, Radish)
    • 2 oz    Scallions, chopped
    • 2 oz    Carrots, small dice
    • 1 Tbsp    Cilantro, leaves, whole 

Direction

    1. Place cooked vegetables in bowl.
    2. Add the hot broth.
    3. Top with the remaining ingredients.
    4. Sprinkle with the cilantro.
    5. Serve immediately.
