Caldo de Vegetales
A hearty vegetarian soup with scallions and carrots, simmered in Latin-style vegetable broth, and garnished with fresh cilantro.
Ingreadient
- 8 oz True Foundations® Latin-style Vegetable Broth
- 4 oz Assorted Roasted Vegetables (Sweet Corn, Zucchini, Squash, Radish)
- 2 oz Scallions, chopped
- 2 oz Carrots, small dice
- 1 Tbsp Cilantro, leaves, whole
Direction
- Place cooked vegetables in bowl.
- Add the hot broth.
- Top with the remaining ingredients.
- Sprinkle with the cilantro.
- Serve immediately.
