Beet Root, Swiss Chard, Carrot Top, and Napa Cabbage Kimchi
Combine upcycled farmers market vegetable tops and edible trim with Custom Culinary® Kimchi Prep for a delicious kimchi.
Ingreadient
- 16 oz. Water
- 5 oz. Custom Culinary® Kimchi Prep
- ½ lb. Beet Root, stems and leaves, chopped
- ½ lb. Rainbow Swiss Chard, stems and leaves, chopped
- ¼ lb. Carrot or Fennel Tops, chopped
- 12 oz. Napa Cabbage, chopped
Direction
- In a large non-aluminum bowl, mix 5 oz. of Kimchi Prep with 16 oz. of water, and 2 lbs. of chopped vegetables.
- Toss in brine, cover and refrigerate overnight for best flavor infusion.
