Beet Root, Swiss Chard, Carrot Top, and Napa Cabbage Kimchi


Combine upcycled farmers market vegetable tops and edible trim with Custom Culinary® Kimchi Prep for a delicious kimchi.

Ingreadient

    • 16 oz.     Water
    • 5 oz.     Custom Culinary® Kimchi Prep
    • ½ lb.    Beet Root, stems and leaves, chopped
    • ½ lb.    Rainbow Swiss Chard, stems and leaves, chopped
    • ¼ lb.    Carrot or Fennel Tops, chopped
    • 12 oz.    Napa Cabbage, chopped

Direction

    1. In a large non-aluminum bowl, mix 5 oz. of Kimchi Prep with 16 oz. of water, and 2 lbs. of chopped vegetables. 
    2. Toss in brine, cover and refrigerate overnight for best flavor infusion.
