For many years my people have cooked on the bayous of Louisiana to feed their families, friends, and strangers. The meats they cooked were either hunted, or fished, or store bought. and the vegetables were homegrown, so we knew we were eating the best. I was the third boy in the family and today I have decided to start a Cajun cookbook, and I know my children will carry on with the Chef Bourque cooking tradition.
